Shopping List Butter Vanilla Extract Caster sugar Eggs Self-raising flour Milk Food Colouring White Premade icing
Ingredients 125g unsalted butter, softened 1 teaspoon vanilla extract 3/4 cup caster sugar 2 eggs 1 1/2 cups self-raising flour, sifted 1/2 cup milk
Method Step 1 Preheat oven to 160°C fan-forced oven.
Step 2 Cream butter, vanilla essence and sugar in a small bowl until light and fluffy. Add eggs, 1 at a time, beating after each addition (mixture will separate at this stage). Transfer mixture to a large bowl. Stir in half the flour. Stir in half the milk. Repeat with remaining flour and milk until combined.
Step 3 Divide mixture up into 4 even sized portions in separate bowls. Drop food colouring into the mixture and mix in well.
Step 4 Using teaspoons, dollop a small amount of each coloured mixture into prepared cake tins lined with cupcake patties. Do not stir the coloured mixture together.
Step 5 Place in a moderate oven and back for 15-20 minutes. Leave in tin to cool.
Once cooled, ice with white icing and enjoy!
